Our June 7th date was snapped up right away for a private party. Here’s what the menu looks like so far.

Sourdough parker rolls
Fluke in spicy grapefruit, toasted sesame seeds, pickled ramps
English muffin rounds, lardo, chive oil
Buttermilk soft shell crab, smoked tomato vinaigrette, arugula flowers
Pea soup, chanterelles, crispy shrimp heads
Market salad, with toasted wheat berries, corn shoots, guanciale
Lasagna of asparagus, green garlic, mustard b├ęchamel with Pawlet, Vermont cheese.
Tomato braised short ribs, seared, with roasted garlic fingerling potatoes
Warm Rhubarb pie, brown butter ice cream
